Anydro is the Greek word for "without water"-the tomato plants grow in soil consisting only of volcanic ash on the island of Santorini, Greece & in the summer months receive moisture only from the natural humidity & mist, thus producing a very small tomato with a deep color unusually rich in nutrients. These tomatoes produce a tomato paste essentially without acidity containing only tomatoes & tomato juice. The taste is intense, complex & smoky & the texture is thick.. a little goes a long way.
